2-Minute Onion Dijon Dressing

Ingredients

1 shallot, finely minced, about 1/4 cup

1/2 cup good-quality olive oil

1/4 cup red wine vinegar

2 tablespoons Dijon mustard

Salt and black pepper, to taste

Directions

Place the shallots and olive oil in a microwave-safe container.

Microwave the shallots in the oil in two 30-second increments so you can make sure they don’t get too brown.

Stir in the vinegar and Dijon, and season to taste with salt and black pepper. You may need to add more vinegar if it’s not punchy enough or more olive oil if it’s too acidic.

Store it in the refrigerator until ready to use.

Leftovers can be kept in an air-tight container in the refrigerator, which will keep for five to seven days.
